If you could only have one, would you pick the fine or extra fine?
Amsa: My husband says he uses fine for everything but not tried it on an axe, but states it put razor sharp edge on knives. -

Is this product fixed to the mount? Or will it pop out?
Amsa: The diamond plate will not pop out is attached to the mount. I used it so many times, and never come out from the mount. -

I just bought a mercer steel chef's knife. How would I use this steel to sharpen it? Would this be a good choice? (I'm a novice.)
Amsa: I don't know about your particular knife, but I haven't found anything this won't sharpen, yet. I've even used it to sharpen tungsten carbide metalworking tools in our machine shop.
